COLORADO CHARCUTERIE BOARD   $15 gfo add $3 Hazel Dell Mushrooms with rabbit sausage from Denver Smokehouse, and 3 different cheeses from Cheese Importers here in Longmont, paired with sliced sourdough from Marketplace Bakery.  It's a little off from traditional and so worth it.

Mixed greens, bacon,  garlic confit tomato, shallot & gorgonzola with a balsamic vinaigrette topped with a 6oz Flat Iron prime steak from Huwa Reserve. Suggested pairing is the Noble Tree, Cabernet Sauvignon, Sonoma, CA

Mixed greens, shallots, tomatoes; dressed with mustard champagne vinegrette, and two crabcakes drizzled with anchovy aioli. Suggested pairing is the Katherine, Chardonnay, Cambria, Sonoma, CA

Gorgeously marbled, local beef coming out of Keensburg, CO dressed with a house-made Balsamic gastric and confit garlic paired with mashed potatoes and broccolini. Please notify your server of your preferred cooking temperature, Chef suggests Medium Rare. 
 
Bison Bolognese  $28  gfo
Fresh ground bison from the Colorado Front Range in a rustic, chunky tomato bolognese over wide, ribbon-like, fresh tagliatelle pasta. 

TenderBelly Grilled Pork Tenderloin $30 gf, vgo **
We are so proud to host this responsibly raised, heritage pork, coming from Boulder. 8oz grilled pork tenderloin dressed with an ancho chili, BBQ sauce accompanied by a fire roasted, vegan cream corn and grilled green beans, finished with a mango salsa.  Please notify your server of your preferred cooking temperature, Chef suggest Medium Rare. We suggest pairing this with Kunde, Zinfandel, Sonoma, CA
